Friendsgiving may be more popular than ever in 2020. With large family gatherings highly discouraged, you and your roomies might be staying in town and making Thanksgiving happen yourselves. We had the chance to get some great tips and recipes from Ben Gullett, Food Enthusiast and Home Cook.

  • 4 cups cooked stuffing (leftover)
  • 1 cup diced/shredded turkey
  • 1/4 onion diced
  • 1 garlic clove minced
  • 6 oz. brie rind removed and diced
  • 1 tsp. butter
  • 1/4 cups chicken broth
  • 1/2 cup flour
  • 3 eggs beaten
  • 1 1/2 cups ground Southern Recipe Small Batch Cranberry Jalapeño pork rinds

 

Directions:
  1. Preheat the oven to 375 degrees F.
  2. Place the cooked stuffing in a large bowl. 
  3. Heat the bacon grease in a large saucepan or dutch oven over medium heat. Add the onions and garlic. Cook until soft, about 2 minutes.
  4. Add the turkey and cook for 1 minute. Remove from heat and pour over the stuffing. Mix to combine.
  5. Add the brie and mix to distribute throughout the stuffing mixture.
  6. Add chicken broth until the mixture is just wet enough to form into balls.
  7. Roll stuffing into 2 inch balls. Coat in the flour, dip in the egg wash, and dredge in the crushed pork rinds. Place on a parchment paper lined baking sheet.
  8. Spray each ball with nonstick cooking spray and bake for 25-30 minutes, or until golden brown and crisp on the outside.

ParmCrisps Apple Crostata
  • 1 1/4 Cup Flour
  • 1 teaspoon sugar
  • 8 Tbsp chilled, salted butter, cut into 1/2-inch cubes
  • 3-4 Fuji or Granny Smith apples thinly sliced
  • 2 Tbsp lemon juice
  • 1 1/2 teaspoons lemon zest
  • 1/2 cup sugar
  • 2 Tbsp cornstarch
  • 1/2 teaspoon ground cinnamon
  • Small pinch of salt
  • 1 egg white
  • 1 teaspoon melted butter
  • 1 Tub Original ParmCrisps
  1. Pulse flour, sugar and salt in food processor
  2. Add 4 Tbsp butter and pulse until butter is no larger than a pea, add the rest of the butter (4 Tbsp) and do the same
  3. Add 2 Tbsp of very cold water and pulse, continue to add cold water one teaspoon at a time until the dough holds together when pinched (no more than 2 tsps)
  4. Put dough onto clean surface, flatten and wrap in plastic wrap to chill for 1 hour
  5. While chilling, preheat oven to 400 F
  6. After an hour, remove from the refrigerator and let sit for 7. minutes before rolling it out on a lightly floured surface (14 inch round)
  7. Carefully transfer to parchment lined baking sheet
  1. Whisk sugar, cornstarch and spices in small bowl
  2. In a separate bowl, coat apple slices with lemon juice, then combine with sugar mixture
  3. Place the apple mixture in the center of the rolled out dough, leave 3-inches around the edges
  4. Gently wrap edges up and over apples
  5. Brush egg white over the crust
  6. Brush butter on exposed apples
  7. Bake at 400 F for 45 – 60 mins (Check after 30 minutes and tent the apples with foil)
  8. Remove from oven, sprinkle with ParmCrisps Parmesan Crumbles and let cool for 30 minutes
